In addition to the ingredients listed in the recipe below, you can make many substitutions or additions and still have a fabulous dinner.

You can add cheese, sour cream, jalapenos, tortilla chips or strips, corn chips, etc. There are so many options, and each one is delicious with the soup.

Equipment

  • Cuisinart 622-30DF Chef’s Classic 12-Inch Nonstick-Hard-Anodized, Deep Fry Pan w/Cover

Ingredients

  • 1 lb. Ground Beef
  • 1 – 28 oz. can crushed tomatoes
  • 1 – 15 oz. Pinto’s undrained
  • 1 small onion chopped
  • 1 – 15 oz. corn
  • 1 Pkg. Ranch Dressing Mix – Dry
  • 1 Pkg. Taco Seasoning Mix – Dry
  • 2 cups Tortilla Strips Optional Topping
  • 1 cup Shredded Cheddar Cheese Optional Topping
  • ½ cup Sour Cream Optional Topping

Instructions

  • Cook ground beef and onion in skillet until done – drain juices and discard
  • Combine all but optional ingredients in Crock Pot
  • Cook on Low for 4-6 hours
  • Serve with optional toppings if desired

Notes

Optional Toppings are not included in Calorie Count.  
Optional Ground Turkey can be substituted for Beef – Approx. 440 less calories total or 73 less calories per serving.  

Running Late Option

If you don’t have 4-6 Hours to slow cook your easy taco soup recipe, you can move to a saucepan on the stovetop.

Slow cooking helps blend the many ingredient flavors; however, in a pinch, the stovetop is still delicious.

    I don’t use store bought seasoning mixtures, especially Ranch, since it has MSG. I use this recipe for taco seasoning:

    1 Tbsp chili powder
    ½ Tbsp paprika
    ½ tsp onion powder
    ¼ tsp garlic powder
    1/2 tsp cumin
    1 tsp oregano
    ⅛ tsp cayenne pepper
    1/2 tsp red chili pepper flakes
    1 tsp salt
    1 tsp freshly ground black pepper
    INSTRUCTIONS
    1. Mix all ingredients together and use taco seasoning for all your favorite Mexican recipes.
    2. Store in an airtight container up to 6 months in a cool and dry place.
