This is such an easy to make cornbread muffin recipe because you use Jiffy Cornbread Mix and it’s just a dump and stir away from the best muffins.

First, you should beat the egg and then dump all remaining ingredients into a mixing bowl. Stir the mixture until all the ingredients are wet and the cornbread muffins recipe batter is slightly lumpy.

Cornbread Muffin Options

First, you can bake these muffins in a standard full size muffin tin or you can use mini muffin tins. Therefore, you will have either 12 large cornbread muffins or 24 mini muffins.

I love making the mini muffins and the cook time is slightly less. Within 15-20 minutes your muffins will be golden and delicious.

If you are using the full size muffin tins, the cook time will be 20-25 minutes. Be sure to keep a close eye on your muffins to not over cook.

This easy to make corn bread muffins recipes is a twist on traditional cornbread with the addition of sweet cream corn. It's a southern tradition that I know you will love.

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes


  • 1 - Box Jiffy Muffin Mix
  • 1 - large egg, beaten
  • 1/2 - large can of cream style corn
  • 1/2 - cup sour cream
  • 1/4 - cup melted butter


  1. Preheat Oven 350 degrees
  2. Add all ingredients in a large mixing bowl
  3. Stir until batter is slightly lumpy
  4. Grease muffin tins
  5. Pour batter into muffin tins approx. two thirds full
  6. Bake for 15 - 25 minutes until tops are golden brown
  7. Double check - If making 12 large muffins, slide a toothpick into a center muffin until it comes out clean.


You can use either one large muffin tin or two small muffin tins.

You can a jalapeno pepper to the top of each muffin if desired.

such a great idea to make them in mini muffin pans and add the jalapeno to the top! I use jiffy mix often, so I will definitely try this!
