Makes a great side dish for Black Bean Cakes

- Small Sauce Pan
Ingredients
- 2 12 oz. Whole Kernel Corn
- ⅔ Cup Diced Onion
- ⅔ Cup Green Pepper
- ⅔ Cup Pimento's
- ½ Cup White Vinegar
- 2 tbsp oil
- ¼ Cup Sugar
- 2 tsp Dry Mustard
- ½ tsp Salt
- ½ tsp Pepper
Instructions
- Drain Corn saving ½ cup of juice
- Combine Corn, Onion, Pepper & Pimento's in a large mixing bowl.
- Combine remaining ingredients including reserved corn juice in a sauce pan
- Bring sauce pan mixture to a slight boil
- Pour hot liquid over Corn mixture and stir.
- Cover & Refrigrate over night, stirring occasionally.
- Serve as a cold side dish.

Wasabi Mashed Potatoes
Servings: 2 people

- 2-3 qt. sauce pan
Ingredients
- 4-6 Red Potatoes Small to Medium in size
- 4 tbsp Butter
- ½ tbsp Wasabi Paste
- 1 tbsp Sour Cream
- Salt To taste
- Pepper To taste
Notes
Wash and Cut Potatoes into small chunks leaving the peal on.
Cover with water and boil until soft.
Drain water and return potatoes to hot pot
Add butter, sour cream & wasabi
Roughly mash potato mixture to desired smoothness.
Add Salt and Pepper to taste.
Serve immediately.
Recipe is easily doubled or tripled.
Easy Asian Slaw
Servings: 6 People

- 1 bag cabbage slaw mixture Or Small Head of Cabbage Chopped
- 3 tbsp olive oil extra virgin
- 1 tbsp toasted sesame oil
- 1/4 cup rice vinegar
- 3 tbsp raw honey
- 1 tbsp soy sauce
- 1 garlic clove
- 1 tsp ginger powder
- ½ tbsp salt
- ¼ cup toasted sesame seeds Optional
Notes
Mix all ingredients (except toasted sesame seeds)
Cover and refrigerate for a minimum of 2 hours
Add optional toasted sesame seeds just before serving.
Excellent served with Sear Ahi Tuna and Wasabi Mashed Potatoes

Tasty pesto great on pasta, bread, and great to use in soups.

Ingredients
- 3 cups Basil Fresh
- 1 Cup Olive Oil Extra Virgin
- ¾ cup Parmesan cheese Shredded
- ⅛ cup walnuts chopped
- ½ cup Pine nuts
- 2 tbsp garlic minced
- ⅛ tsp salt
- ¼ tsp pepper
Instructions
- Wash Basil Well & pat dry
- Blend all ingredients together in food processor or blender. Blend until almost smooth. Leaving the nuts slightly crunchy.

Pine nuts can be substituted with Almonds
Salt and Pepper can be adjusted to taste.
Keep Pesto in an air tight container in refrigerator for up to a week.

Ingredients
- 3 cups Chopped Granny Smith Apples
- 2 cups Fresh Cranberries
- 2 tbsp Plain Flour
- 1 cup Sugar
- 3 pkg Cinnamon & Spice Instant Oatmeal
- ¾ cup Chopped Pecans
- ½ cup Plain Flour
- ½ cup Firmly Packed Brown Sugar
- ½ cup Butter Melted
Instructions
- Preheat Oven 350°
- Combine Apples, Cranberries & 2 Tbsp. Flour tossing to coat fruit
- Add 1 Cup of Sugar and Mix well
- Pour into a slightly greased baking dish
- Combine remaining ingredients and mix well
- Spoon over mixture over Fruit covering the top
- Bake uncovered – 45 minutes
- Garnish with pecan halves and cranberries if desired
