Today, we are sharing our full menu for this fun and festive Cinco de Mayo dinner. I’m providing the side dish, Cilantro & Lime Black Beans, which will be delicious with Anne & Ann Marie’s main dish. Cilantro & Lime Black Beans

Gather your supplies listed on the menu below. Fresh Cilantro is a must for full flavor, and it’s easy to find in most grocery stores.

Easy to Prepare Recipes

Y’all know I only cook recipes that are “so easy even I’ll make it” and this is one of those recipes. First, everything is cooked in a cast-iron skillet, except for the rice. You can prepare the rice ahead of time if you desire.

Begin by saluting the onions and garlic with olive oil.

Next, add each ingredient listed below gradually and continue stirring until the dish is hot.

You can then immediately garnish the Black Beans and Rice with fresh cilantro and lime slices. It makes a beautiful dish and can be served right from the skillet.

The recipe is a wonderful side dish, but it is a hearty vegetarian dish as well.

Cilantro Lime Black Beans Side Dish Recipe

Cilantro, Lime & Black Bean Skillet Dish

Fresh & Healthy Side Dish

Prep Time 15 minutes
Cook Time 35 minutes
Total Time 50 minutes

Ingredients

  • 2 cups cooked white rice
  • 1 15 oz. can black beans, drained and rinsed
  • 2 tbsp chopped cilantro
  • 3 tbsp minced garlic
  • 1 cup chopped onion
  • โ…“ cup lime juice, approx. 3 limes juiced.
  • ยผ tsp cayenne pepper
  • ยผ cup fat free vegetable broth
  • 1 tbsp olive oil

Instructions

  1. Cook Rice
  2. Add olive oil to skillet and salute onion & minced garlic until onion begins to soften
  3. Add Vegetable broth
  4. Add Lime Juice & Cayenne Pepper
  5. Add Rice, Black Bean & Cilantro and stir until hot.
  6. Garnish with Lime & Fresh Cilantro
  7. Serve Immediately
