Welcome to our Cinco De Mayo Virtual Supper Club. Today we are sharing our full menu for this fun and Festive Dinner. If you are coming over from Simply 2 Mom’s Main Dish, I’m so glad you are joining me. Didn’t their Green Chile Chicken Enchiladas sound Delicious.

I’m providing the side dish, Cilantro & Lime Black Beans which will be delicious with Anne & Ann Marie’s main dish. This is an easy, tasty & healthy dish that I think you will love.

Be sure to see our Cinco De Mayo full recipe at the end of this post.

Cilantro & Lime Black Beans

Gather your supplies listed on the menu below. Fresh Cilantro is a must for full flavor and it’s easy to find in most grocery stores.

Easy to Prepare

Y’all know I only cook recipes that are “so easy even I’ll make it” and this is one of those recipes. First, it’s all cooked in a cast iron skillet except for the rice. You can prepare the rice ahead of time if you desire.

Begin by saluting the onions and garlic with olive oil.

Next, you will gradually add in each ingredient as listed below and continue to stir until the dish is hot.

You can then immediately garnish the Black Beans and Rice with fresh cilantro and lime slices. It makes a beautiful dish and can be served right from the skillet.

The recipe is wonderful side dish but it is a hardy vegetarian dish as well.
