Summer means it’s harvest time and we have an abundance of Zucchini. This is a recipe that I’ve used for years with a variety of vegetables.
So here is my Recipe for an Easy Zucchini Bake. Today I’m using only ingredients that I have gathered from my own garden, however I have made this recipe with so many different vegetables with the same great results.
Begin with Fresh Veggies
This recipe is so easy and delicious especially when using fresh vegetables from the garden.

Note: I also used a yellow squash in this recipe. You can use whatever you choose and it will still be delicious.
Easy Zucchini Bake Recipe
- 2-3 Zucchini's, depending on size
- 1 Jalapeno Pepper, chopped
- 1 tomato, chopped
- 1/2 cup Parmesan cheese, shredded
- 2 tbsp olive oil
- 1/4 tsp celery salt
- 1/4 tsp ground pepper
- Pre-heat oven to 350°
- Wash & Chop all vegetables
- Toss with olive oil & seasonings
- Place in baking dish
- Sprinkle cheese over top
- Bake for 1 hour at 350°
This is an easy recipe to double or triple. You can add any number of vegetables to the mixture. Broccoli, mushrooms, onion, squash, sweet pepper's, etc. These all work great with these same techniques.

Another thing that I love about this easy recipe is I can prepare everything in advance and pop it in the oven just before my guest arrive.
I like to have the entire dish mixed and ready for the oven hours before the meal. You can keep the dish covered in the refrigerator several hours before cooking. It’s so easy, I make it all the time. Enjoy!
