Late summer means it’s harvest time and we have an abundance of Zucchini. This is a recipe that I’ve used for years with a variety of vegetables.
So here is my Recipe for an Easy Zucchini Bake. Today I’m using only ingredients that I have gathered from my own garden, however I have made this recipe with so many different vegetables with the same great results.

Easy Zucchini Bake Recipe
Easy Zucchini Bake
Equipment
- 8 x 8 baking dish
Ingredients
- 2-3 Zucchini's depending on size
- 1 Jalapeno Pepper chopped
- 1 tomato chopped
- 1/2 cup Parmesan cheese shredded
- 2 tbsp olive oil
- 1/4 tsp celery salt
- 1/4 tsp ground pepper
Instructions
- Pre-heat oven to 350°
- Wash & Chop all vegetables
- Toss with olive oil & seasonings
- Place in baking dish
- Sprinkle cheese over top
- Bake for 1 hour at 350°
Notes
You can use a variety of vegetables to make the Easy Zucchini Bake Recipe. In addition, the recipe can be doubled or tripled to accommodate larger groups and additional veggies. You can also leave the zucchini out completely if you prefer.

Prepare ahead
Another thing that I love about this easy recipe is I can prepare everything in advance and pop it in the oven just before my guest arrive. I like to have the entire dish mixed and ready for the oven hours before the meal. You can keep the dish covered in the refrigerator several hours before cooking. It’s so easy, I make it all the time. Enjoy!
