10 Perfect Baked Zucchini Recipes
Hey friends, one of my favorite and easiest vegetables to grow is zucchini. Although I was unable to plant a garden this year, in past years, my garden has produced a lot of zucchini at this time, and usually more than we can consume. If your garden is currently overflowing with a ton of zucchini, or you want to pick some up at farmer’s markets or the grocery store, it’s the perfect time to share some healthy zucchini baking recipes. These are some of the easiest Baked Zucchini Recipes I could find.
What is a Zucchini?
It’s easy to confuse Zucchini with cucumbers, especially in the produce department. However, zucchini is actually in the squash family and tastes nothing like a cucumber. They are easy to grow and are usually harvested from early to late summer. In addition, they are low in calories, low in carbs, and packed with nutrients, which makes them a great choice for weight loss.
Using a zucchini for baking, and it’s considered one of the healthiest veggies around.

What Can You Use Zucchini For?
First, this healthy food choice has been attributed to lowering blood sugar levels, reducing the risk of heart disease, being rich in antioxidants, aiding in digestion, and supporting weight loss.
Zucchini is a very versatile food and can be used in many recipes, such as breads and vegetable dishes, as well as a replacement for pasta noodles.
You can eat zucchini raw, boiled, steamed, baked, grilled, and fried. All versions are delicious; however, today I’m sharing Zucchini Recipes for Baking.

Rachel, this post is so timely as my garden is abundant with zucchini. So far I’ve made zucchini lasagna (but yours looks so good with the artichokes), zucchini pineapple bread, zucchini chocolate chip bread, zucchini relish, spirallized zucchini with tomato sauce and meatballs, and now making zucchini cupcakes for July 4th. Will try the other recipes as I still have SO much zucchini!
