  • 6 Eggs
  • 1/2 cup chopped cooked spinach
  • 1/3 cup chopped cooked bacon
  • 1/3 cup shredded cheddar cheese
  • 1/4 cup chopped onion (sauté)
  • Salt and Pepper
  • Dash of Garlic Powder (optional)
  • Optional chopped tomatoes and Parsley to garnish

You can double or triple these ingredients if you need more than six muffins.

Prepare Bacon & Egg Breakfast Muffins

To start your preparation of the Bacon & Egg Muffins, preheat the oven to 375 degrees and use cooking spray to grease the six muffin tins.

Cook Spinach, Onion, and Bacon First

Begin adding the butter to sauté the onion and wilting the spinach in a skillet. If any liquid remains, drain the spinach and pat dry.

In addition, cook and drain any grease from the bacon. Crumble into small pieces.

Add crumbled bacon and shredded cheese to the egg mixture.

Finally, add the cooked spinach and onion to the mix.

In addition, salt and pepper to taste. As another option, add a dash of garlic powder.

Cook Time 15 minutes

Ingredients

  • 6 Eggs
  • 1/2 Cup Spinach cooked & drained
  • 1/3 Cup Bacon - cooked and crumbled
  • 1/3 Cup Shredded Cheddar Cheese
  • 1/4 cup chopped fresh sweet onion (sauté)
  • 1/4 tsp. butter
  • Salt & Pepper
  • Chopped Tomatoes (Optional)
  • Fresh Parsley (optional)
  • Dash of Garlic Powder (Optional)

Instructions

  1. Preheat Oven to 375 degrees
  2. Spray Muffin Pan with Cooking Spray
  3. Add 1/4 tsp. butter to skillet
  4. Cook Spinach & Onion in butter until tender, drain and set aside
  5. Cook Bacon, drain, and crumble - set aside
  6. In a large bowl, add 6 eggs and whisk until smooth.
  7. Add Spinach, Onion, Bacon, Cheese, and seasoning to the mixture - stir well.
  8. Divide the mixture evenly into the six muffin tins.
  9. Cook for 15 minutes or until firm
  10. Serve with chopped tomatoes and parsley (optional)

Notes

Breakfast Muffins can be served immediately or stored in the refrigerator until ready to serve.

To heat, place on a baking sheet and cover with aluminum foil. Place in a 350-degree pre-heated oven. Heat until hot.

If bacon & egg muffins have been frozen, remove them from the freezer and place them in the refrigerator 24 hours prior to heating as directed above.

Brunch is our favorite meal around here. My daughter is actually having a brunch wedding in April and what a fun twist it would be to serve these. Love the added spinach and tomatoes. And they are pretty enough for a wedding buffet too! Thanks for letting me join y'all. Loved each recipe!
