Sweet Corn Bread Muffins

This easy to make corn bread muffins recipes is a twist on traditional cornbread with the addition of sweet cream corn. It's a southern tradition that I know you will love.

Ingredients

  • 1 - Box Jiffy Muffin Mix
  • 1 - large egg beaten
  • 1/2 - large can of cream style corn
  • 1/2 - cup sour cream
  • 1/4 - cup melted butter

Instructions

  • Preheat Oven 350 degrees
  • Add all ingredients in a large mixing bowl
  • Stir until batter is slightly lumpy
  • Grease muffin tins
  • Pour batter into muffin tins approx. two thirds full
  • Bake for 15 - 25 minutes until tops are golden brown
  • Double check - If making 12 large muffins, slide a toothpick into a center muffin until it comes out clean.

Notes

You can use either one large muffin tin or two small muffin tins.
You can a jalapeno pepper to the top of each muffin if desired.
