Black Bean Cake Recipe: Easy Healthy Recipe

Here is a delicious Black Bean Cake Recipe that is nutritious and easy to make. Serve with salsa, sour cream, or corn relish for a yummy meal. This is an easy recipe to make ahead and freeze. I love having a recipe that I prepare once and can later pull another meal from the Freezer.

Ingredients for Black Bean Cakes

This recipe has the advantage of using items that can be found in your pantry for a quick spur of the moment dinner.

  • 2 – 15oz. cans of Black Bean or cook your own.
  • 1/2 cup finely chopped green onions
  • 2 jalapeno peppers – chopped
  • 3 tsp. minced garlic
  • 1 tsp. cumin powder
  • 2 tbsp. BBQ sauce (your choice)
  • 1/2 cup dried bread crumbs or panko
  • 1/4 cup chopped fresh cilantro or dash of parsley flakes
  • Dash of Red Pepper Flakes (optional)

In addition, you can switch ingredients if necessary and still achieve a delicious tasting Black Bean Cake. I recently didn’t have jalapenos so I added additional red Pepper flakes and it was still yummy.

How To Prepare the Black Bean Cakes

  • First, wash and dry all the veggies.
  • Drain the liquid from the black beans and rinse with water.
  • Smash the black beans until they are paste-like.
  • Add all remaining ingredients except bread crumbs or panko to the smashed black beans.
  • Mix all ingredients well and separate into several balls. I can usually get eight patties with this recipe. It will depend on what size you desire.
  • Place your bread crumbs or panko on wax paper and roll the black bean balls until they are covered.
  • I leave them shaped in a ball until I place them in the skillet. If I don’t cook them all immediately, I add the balls to a freezer bag for a future meal.
  • Add cooking spray to you skillet and place the black bean patties on the warm pan. Use a spatula to flatten the balls into patties. Cook over medium heat until hot and the bread crumbs have turned golden brown.
  • You can garnish with salsa or sour cream. (We use plain Greek yogurt as a substitute for sour cream.)

Form into Balls or Patties

If you plan to freeze your patties, I recommend rolling them into a ball for storage. Once they thaw, you can easily press them into the preferred patty shape.

Because there are only two of us, this recipe is more than needed for one meal. I prepare all the patties and freeze all that will not be needed for the current meal. Here is a Chicken Enchilada Recipe that makes a large amount and freezes well.

Just label your freezer bag, and these will still taste delicious for up to 6 months.

Delicious Sides to Complement Black Bean Cake Recipe

These Black Bean Cakes pair well with salsa, and/or sour cream. One of my favorite combinations is to serve this Corn Relish Recipe with the Black Bean Cakes.

Corn Relish Ingredients

  • 2- 12 oz. cans of whole kernel corn
  • 2/3 cups diced onions
  • 2/3 cups green pepper
  • 2/3 cups pimentos
  • 1/2 cup white vinegar
  • 2- Tbsp. Canola oil
  • 1/4 cup sugar
  • 2 tsp. dry mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper
  1. Drain the corn and save 1/2 cup of corn juice
  2. Combine Corn, Onion, Pepper, and pimento in a Bowl.
  3. Combine the remaining ingredients and the reserved corn juice in a saucepan and bring to a boil until all the dry ingredients have dissolved.
  4. Pour the liquid mixture over the corn mixture in the bowl, stir well, cover, and refrigerate overnight, stirring occasionally.

The Corn Relish Recipe is also easy to make and keeps for several weeks in the refrigerator. It can be added as a side dish to other meals besides the Black Bean Cakes.
