A non-dairy, gluten-free, and 340-calorie option for a yummy meal in one. It is also quick and easy to put together, and because you’re using a slow cooker, you can prepare and walk away. A few hours later, dinner is ready.

Ingredients for Thai Peanut Chicken
- 2 lbs. Chicken Breast
- 1 medium onion
- 1 medium red pepper
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 5 oz. baby spinach
- 1/4 cup fresh-squeezed lime juice
Note: You may add more salt if needed. Salt to taste!
Make your own peanut sauce: Ingredients
- 1 tsp. minced garlic
- 1 cup coconut milk
- 1/2 cup peanut butter
- 2 tbsp. soy sauce
- 2 tbsp. rice vinegar
- 1 tbsp. honey
- 2 tsp. sesame oil
- 1 tsp. ground ginger
- 1/2 – 1 tsp. red pepper flakes
How To Prep For The Slow Cooker
- First, cube your chicken into bite-sized pieces, and chop the onion and red pepper. Add to the crockpot and toss to season with salt and pepper.
- Next, whisk all the peanut sauce ingredients in a mixing bowl.
- Pour peanut sauce over the chicken mixture in the crockpot.
- Cook on low for 4 hours. Ensure the chicken is well done.
- Additional salt can be added if needed. (I added a dash of salt)
- Add spinach and lime juice to the crockpot.
- Stir and heat until the spinach is wilted into the sauce. It usually takes a few minutes for the spinach to wilt. Stir occasionally to mix.
- You can serve alone or over rice or noodles.


The mixture cooks in the crockpot for 4 hours, and then lime juice and spinach are added.


Insider Tip
I found that additional salt was needed so just before adding the spinach and lime juice, I add a dash more salt. This is optional.

- 5 oz. Spinach Baby
- 1/4 cup lime juice fresh squeezed
- 1/2 tsp salt
- 1/4 tsp black pepper
Peanut Sauce Ingredients
- 1 tsp. garlic minced
- 1 cup coconut milk canned
- 1/2 cup peanut butter creamy
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 2 tsp sesame oil
- 1 tsp dried ginger
- 1/2 – 1 tsp crushed red pepper
Instructions
- Chop Chicken breast into bite siz-sizedces
- Dice Onion
- Dice Red Pepper
- Place the above ingredients in the crockpot
- Add salt and pepper and toss
- Whisk all the Peanut Sauce Ingredients in a mixing bowl
- Pour peanut sauce over the chicken and vegetable mixture
- Stir
- Cook on Low for 4 hours- ensuring that the chicken breast are well done.
- Add Spinach & Lime Juice to crockpot
- Stir
- Cook for a few minutes to allow the spinach to wilt into the sauce. Stir if needed.
- Serve alone, or over rice or noodles.
