High Protein Thai Peanut Chicken in Crockpot

Ingredients

Peanut Sauce Ingredients

garlic

coconut milk
canned

cup
peanut butter
creamy

soy sauce

tbsp
rice vinegar

honey

sesame oil

tsp
dried ginger

crushed red pepper
Instructions
Chop Chicken breast into bite siz-sizedces
Dice Onion
Dice Red Pepper
Place the above ingredients in the crockpot
Add salt and pepper and toss
Whisk all the Peanut Sauce Ingredients in a mixing bowl
Pour peanut sauce over the chicken and vegetable mixture
Stir
Cook on Low for 4 hours- ensuring that the chicken breast are well done.
Add Spinach & Lime Juice to crockpot
Stir
Cook for a few minutes to allow the spinach to wilt into the sauce. Stir if needed.
Serve alone, or over rice or noodles.
Notes
Additional salt if needed to taste.
