Brad’s Favorite Holiday Side Dish
This is a favorite go-to holiday recipe and my husband’s favorite. It includes the classic ingredients you’ll find in most old casserole recipes, cream of soups, mayo, and topped with crackers and cheese.
It only takes a few minutes to prepare, and you’ll want to do so a day in advance. The broccoli casserole is best when mixed and refrigerated overnight. Then the next day, pop it in the oven and cook it before your meal.
Easy Ingredients
One of the best things about this recipe is that all the ingredients are easy to find, and most are already in your pantry.
- 12 oz. fresh chopped broccoli (you can use frozen if needed)
- 1 – onion chopped onion
- 2 – Eggs Beaten
- 1 – can of cream of mushroom soup
- 3/4 cup mayonnaise
- 1-tbsp. butter
- 1/4 teaspoon salt
- Saltine crackers
- Shredded Cheddar Cheese
Easy Preparations
First, chop the broccoli and onion. Then add broccoli to the saucepan, add salt, and cover with water. Simmer until the broccoli is soft, then drain the water.
In a separate skillet, add butter and chopped onions. Sauté onions until tender.

In a mixing bowl, add eggs and beat. Then add the remaining ingredients except for the crackers and cheese.
Mix ingredients well and add drained broccoli and sauteed onions, stirring well.
Pour into an 8×8 baking dish. Cover and refrigerate overnight.

Time To Bake Broccoli Casserole
Bake the broccoli casserole at least 45 minutes before you plan to serve.
- Remove prepared casserole from refrigerator.
- Crumble crackers and add to the top of the casserole.
- Sprinkle shredded cheese over the top.
- Cover the dish with aluminum foil.
- Place in a pre-heated 350-degree oven and bake for 30 to 35 minutes.
- Remove and let set for 10 minutes before serving.

- 1 Mixing Bowl
- 1 Skillet
- 1 Sauce Pan
- 1 8×8 inch Baking Dish
Ingredients
- 12 Oz. Fresh Broccoli Chopped
- 1 Medium Onion Chopped
- 2 Medium Eggs Beaten
- 1 can Cream of Mushroom Soup
- 3/4 Cup Mayonniase
- 1/4 tsp. Salt
- 1 tbsp. butter
- 10 saltine crackers crumbled
- 1/4 cup cheddar cheese shredded
Instructions
- 1. Chopped broccoli and onions2. Add broccoli and salt to sauce pan and cover with water. Bring to a boil and simmer until tender. Drain3. Add butter and chopped onions to the skillet and saute until onions are tender. 4. Add eggs to the mixing bowl and beat until smooth. 5. Add cream of mushroom soup and mayo to eggs and stir until smooth.6. Add drained broccoli and sauteed onions to the mixture. Stir until well blended. 7. Pour into the baking dish and cover. Refrigerate overnight. 8. Remove from refrigerator approximately. 45 minutes before serving. 9. Top with crushed saltine cracker and shredded cheese.Cover with aluminum foil. 10. Bake for 30-35 minutes in pre-heated over at 350 degrees. 11. Remove from oven and let set for 10 minutes before serving.
