He nailed the tangy flavors early on, but achieving that signature ‘deep-fried’ crunch in an oven was the real challenge. After several soggy sheet-pan attempts and ‘almost-there’ air-fryer attempts, he finally discovered the preheated cast-iron griddle trick. It was the missing piece—perfectly crispy, zesty, and surprisingly low-effort. Here is how you can make this high-protein recipe at home!”

Ingredients for Mustard Crusted Catfish

This recipe is based on two catfish filets, and the amount of each ingredient will vary with more filets.

Low Calorie – High Protein Meal

Another reason we love this recipe is that it is very low in calories but high in protein. Since I’ve needed to increase my protein intake, I’ve been sharing recipes that have helped me regain my strength. You may remember how delicious the Mexican Chicken Casserole and the Thai Peanut Chicken recipes were. If you need to increase your protein intake, this is another healthy recipe you will enjoy.

Prepare Cast Iron Griddle

First, preheat the oven to 400 degrees. Place the cast-iron griddle in the heated oven for approximately 10 minutes until it is hot. While it is heating, you can prepare the catfish.

How To Prepare the Catfish

Place your catfish filets on a piece of wax paper and pat them dry with a paper towel on both sides. You will add the toppings as listed below.

  1. Mustard
  2. Breadcrumbs
  3. Lemon Pepper
  4. Salt
  5. Pepper

Begin on the back side of the filet. Apply a layer of yellow mustard over the entire side.

Then add a layer of plain bread crumbs and press into the mustard.

Next, sprinkle with a light coating of lemon pepper seasoning, salt, and pepper.

Add Catfish To Cast Iron Griddle

  • Remove the cast-iron griddle from the oven, being careful of the HOT surface.
  • Spray the surface with the olive oil spray.
  • Place the prepared side of the catfish on the griddle. (Note: in the photo, you will notice that we used the grill side of the cast iron, but we found that the smooth griddle side works best.)
  • Now repeat steps 1-3 of the catfish preparation on the top side of the catfish filets. (Once again, remember the griddle is HOT, so be careful to only touch the catfish while applying the toppings.
  • Squeeze 1/2 of a lemon evenly over the filets.
  • Slice the other half of the lemon and place the slices on the filets.

Place the griddle back in the heated oven and cook for 30 minutes. Then turn the oven to broil and cook for 2-3 minutes max. to add more crunch. Keep watch on the fish at this point. They can burn quickly.

Serve Easy Catfish Recipe

Once the catfish is done, transfer it to a plate with a spatula. The catfish filets are a soft fish and are fragile after cooking, so I recommend using a large spatula to easily prevent them from falling apart.

You can replace the cooked lemons with fresh slices to garnish if you wish.

This recipe has a tangy flavor that we feel needs no sauce; you may prefer to serve it with tartar sauce. It’s great with slaw, hushpuppies, or fries.

Equipment

  • 1 Cast Iron Griddle
  • 1 Large Cast Iron Spatula
  • 1 Piece of Wax Paper

Ingredients

  • 2 6 oz. Catfish Filets
  • 2 tbsp Yellow Mustard Or enough to coat both sides of fish
  • 1/2 cup Bread Crumbs just enough to cover each side of filets
  • 2 tsp Lemon Pepper Seasoning enough to sprinkle over each side of fish
  • Salt & Pepper To taste
  • 1 Lemon
  • Olive Oil Cooking Spray

Instructions

  • Preheat oven 400 degrees
  • Place cast iron griddle in the heated oven until hot (approximately 10 minutes)
  • Pat the catfish filets dry with a paper towel
  • Place them on a sheet of wax paper with the back side up.
  • Coat the entire side with yellow mustard
  • Add breadcrumbs and press into the mustard
  • Sprinkle with lemon pepper seasoning, salt, and pepper
  • Remove griddle from oven with caution because it will be hot.
  • Spray with Olive Oil Cooking Spray
  • Add filets to the griddle with the prepared backside down.
  • Repeat the catfish coating of mustard, breadcrumbs, lemon pepper, salt, and pepper. Remember not to touch the HOT cast iron while applying the toppings.
  • Squeeze 1/2 of a lemon juice over the two filets.
  • Cut the other half of the lemon into slices and place them on the catfish.
  • Place in the oven and bake for 30 minutes
  • Turn the oven to broil for 2-3 minutes max. (watch closely to avoid burning)
  • Remove from the oven and add to plates with a large spatula.

Absolutely! If you don’t care for catfish, this recipe works well with any mild fish such as cod, grouper, or a thick flounder filet. (Thin cut flounder will break apart easily)

Yes, but you will need to heat the grill to 400 degrees and maintain the temperature while cooking.

You absolutely can and I’m sure it will be delicious. However, the grease will increase the calories and take away the healthy aspect of the recipe.

When he cooked this recipe in the air fryer, the taste was still good. However, the texture and crispy finish was missing. It is still a good alternative if you don’t care for a crispy fish and the coating is still the same.

Brad tried that method a few times also. Because the fish is soft and fragile, it was almost impossible to turn the filets without them breaking into several pieces. Again, the taste and crispy finish was present but in pieces. Plus, when pan-searing, you will need to add oil, which increases the calories and makes a mess on your stovetop.
