- 6 Medium Sweet Potatoes
- 1/2 Cup Packed Brown Sugar
- 1/2 Cup Dark Corn Syrup
- 3 Tablespoons Butter
- 1/2 teaspoon Ground Cinnamon
- Sea Salt
- 2 Tablespoons Olive Oil
Wash and Dry Sweet Potatoes
Dice into medium chunks
Toss in Olive Oil
Add to Baking Dish and Cover with Aluminum Foil
Bake for 45 minutes at 400 Degrees
Add remaining ingredients except Sea Salt to a small saucepan
Heat until melted and smooth to make caramel sauce
Remove Sweet Potato Bake from Oven
Drizzle caramel sauce over the potatoes.
Sprinkle with generous amount of sea salt
Return to oven and bake 20 minutes uncovered or until caramel sauce has glazed.
If you prefer, you can peel your sweet potatoes.
Additional sea salt can be added before serving.
