It’s time for us to reveal our Supper Club Menu for our Summer Picnic.

Here are the Best Picnic Basket Recipes for a fun and relaxing summer picnic. I’m sharing a refreshing Rotisserie Chicken Salad served in a toasty croissant.

Picnic Basket Rotisserie Chicken Salad

Do you like rotisserie chicken? Using a precooked chicken in the salad really helps to cut down on the time. Plus, it’s super easy when you have an extra set of hands in the kitchen.

Simple Recipes Ingredients

This is really such a simple recipe to make. You do want to shred your chicken into small pieces. Then chop your onion, celery and pecans finely. Lastly, wash and halve your seedless grapes.

Place all the ingredients into a large mixing bowl and stir together until all ingredients are well coated in the mayonnaise mixture.

I also have a delicious Hot Chicken Salad Recipe and it goes wonderfully with this Best Fresh Squeezed Lemonade.

Fill your Picnic Basket

This delicious recipe is perfect alone but for our picnic I filled some flakey croissants and added them to our picnic basket.

I crinkled some parchment paper to cover the croissants and keep them fresh.

Refreshing Rotisserie Chicken Salad

Easy, simple recipe great on a croissant.

  • 2 cups Rotisserie Chicken Breast (Shredded and Skin Discarded)
  • ½ cup Mayonnaise
  • ¼ tbsp Spicy Mustard
  • 1 Lemon Juiced
  • ¼ tsp Garlic Salt
  • ½ cup Celery (chopped fine)
  • ½ cup Chopped Pecans
  • ½ cup Onion (chopped fine)
  • ½ cup Seedless Grapes (Halved )
  • ¼ tsp Dill Weed
  1. Remove Skin & Shred Rotisserie Chicken

  2. Chop onion, celery, pecans

  3. Halve grapes

  4. Mix all ingredients together

  5. Cover and chill

Serve with fruit or on a flakey croissant. 

Option:  You can cook or roast your own chicken breast.
